Welcome back to What’s Kate Cooking. Today I am so excited to share this breakfast burrito with you all. It’s very simple to make and so delicious. We have eggs, fried potatoes, Jimmy Dean hot sausage, my homemade salsa, and some avocado. Just so excited to share this with you guys. I think we’re going to have a variation of burritos um here soon. So stay tuned for that. But let’s get you guys started on how you can make these delicious breakfast burritos at home. And by the way, using my favorite tortillas to pull it all together. What is that sound? That is the sound of deliciousness. Essentially fried potatoes here. Yum. So, one medium potato cooked with about a half a tablespoon or so of butter. It is on a side heat again. Making breakfast burritos and so excited to share these with you all. I want to point out that I did leave the skins on the potato. So, that is there. And starting the potatoes first because I do want them to get pretty crispy. Um, and I want them to remain crispy in the burrito, too. So, cooking them essentially for now by themselves to let them get pretty crisp. And then I’ll add the sausage on the side. Try to keep it separated. And then eggs in a pan of their own. And of course, we’re going to use my favorite tortillas, the tortilla land tortillas to pull it all together and have some homemade salsa with avocado inside or on top. So, yum. So excited to share this with you. I am turning the heat down to about a four. And then we’ll add the sausage here in a second. Now, making breakfast burritos and using bacon instead of sausage and cooking it with the potatoes crisps the potatoes so well. And we may be doing that this week, too. So, stay tuned. And even another variation on the breakfast burrito, just a simple egg, sausage, cheese. That one will be posted, too. So, this is essentially like burrito week. Um, normally I am posting more low carb options, but allowing myself to enjoy some of my more favorite things this week and to share it with you all. So, I’ve got Jimmy Dean hot sausage. I do like this one the most when making the breakfast burritos. [Music] You’re going to cover that back up and let that all cook together, but separately. And now just mix all of that together. And actually going to turn that burner down to a three at this point. Time for my favorite tortillas. Tortilla Land. Tortillas, five simple ingredients, very easy to cook. Cooks in 60 seconds. So, I do have this burner on a 7 and 1/2 heat. I usually don’t use anything when I make these tortillas as far as butter, but um or olive oil or spray or anything like that, but this pan is just really weird. So, I am using some today. And as that’s cooking, we do have a pan here for the eggs. [Applause] Going to just butter the pan here. And the pan for the eggs is on a three and a half heat and only using two eggs. And I’ve got to wash my hands before we touch that tortilla. And the eggs I’m actually turning up to about a five at this point cuz I’m just going to scramble those really quick. Now this we are going to kick back up to about a seven heat. Get everything a bit more crisp there. So, we can hear it start to sizzle again. I do have the eggs cooking over here. Yum. Look at these eggs with the cheese. Yum. Okay, now going to bring it all together into this tortilla. [Music] Yum. Yes. Now, we are not done yet. I did forget to add Yum. That homemade salsa with some avocado cut up into it. Bam. And there we go. Enjoy and thanks for watching.
