these are homemade falafu soak dry chickpeas in water for 12 to 24 hours add a teaspoon of baking soda to soften their skin they should double in size now drain them rinse them and add them to a food processor then add peeled and chopped onion chopped garlic chopped parsley mint or both ground cumin ground coriander salt black pepper cayenne pepper and baking powder blend until you reach a fine texture scraping down the sides of the food processor often shape the falafel mixture into bowls with the help of an ice cream scoop and place them on a baking sheet lined with parchment paper warm up the oil to 320° Fahrenheit or 160° C dip the falafel in the oil gently one by one and cook them for 3 to four minutes or until they’re brown and crunchy or you can cook them in the air fryer for about 12 minutes they also get super crunchy and crispy we love them with homemade hummus sprinkled with tahini sauce fresh parsley sumak and zatar

You could also try what I do when I make a soup based on 16 types of dried beans, sold in a bag.
I sort and rinse, then bring them to a boil for about three minutes, turn the heat off, and let the beans (or chic peas) sit in hot water, covered, for several hours. I often let them sit overnight.
When they cool off, they'll be softened but still need more cooking time. Rinse well and give them clean water. Then, simmer to desired softness.
For my soup I add lots of veggies. At the end, if I have leftover meat or seafood, I add it to the bowl to keep the main soup just beans and veggies. The hot soup heats the bits of protein.
With chic peas /garbanzo beans, proceed as shown here.
