The only exception to the Ragù was that I couldn't find Guanciale 😅

I also should have made thinner cuts, the pasta stripes gets wider when boiled.

Soffritto (onion, celery, carrots)
Herbs
Minced pork and red meat (white wine to deglace)
Passata

Pasta:
300g 00 flour
6 egg yolk+ a little bit of the whites to equalize the moisture
