Curried Chicken Waldorf Salad
Ingredients:
1 chicken breast, cooked and cut into bite sized cubes
1 red delicious apple, cored and cubed but not skinned
1/4 cup diced celery (1 stick)
1 – 2 tablespoons mayonnaise
1/4 – 1/2 teaspoon curry powder
1/4 cup walnut pieces
Salt and pepper to taste
Red leaf lettuce

Directions:
In a medium sized bowl, mix together chicken, apple, celery, mayo, curry powder, walnuts, salt and pepper.
Add more mayo if desired.
Serve on lettuce leaves.
Makes 1 – 2 servings.

[Music] Hi, Jenny here. Today we are going to make another simple recipe that you should have all of the ingredients in your house for. We are going to make curried chicken Waldorf. Let’s get started. For this recipe, we are going to need one small chicken breast cut up into bite-sized pieces. One red apple cord and chopped up into small pieces, leaving the skins on. 1/4 cup of celery, which is about one piece. 1/4 teaspoon of curry powder, 1 tbsp of mayo, about 1/4 cup of chopped walnuts, and a couple of lettuce leaves or some bread. I have cooked my chicken ahead of time in the crock pot. I usually like to do that when I um buy chicken at the store. I usually buy a package of chicken breasts or the tenders or whatever and then I cook them right away in my crock pot and that way I have cooked chicken to eat all week. So, a lot of times I like to make regular salads, you know, in in a bowl and and combine all my ingredients. So, that way again I have my chicken ready to go for those salads that I like um or depending on something else that I’m making. So, again, I went ahead and cubed up all that chicken. So, cook your chicken obviously the way that you like it. If you want to cook it again right before making this, cook it on the stove or do something like that, that’s fine. We’re basically going to mix all this up into um into a bowl. So 1/4 teaspoon of that curry powder. Depending on uh how much you like the spices and all that too, you can add more. And um red apple all chopped up into small bite-sized pieces. The celery, this is about one piece of celery. That chops up nicely again into your small bite-sized pieces. and about 1/4 cupish or so of chopped walnuts. You might want to add more. That doesn’t seem like enough for me for this whole recipe. I was like, h really that’s it? I I could use more walnut. So, I might add some more. Again, these are the type of recipes that you make and then you realize that, you know, oh yeah, I could use more of this or less of that. So, again, if you have like a whole apple, that’s nice and easy. you can cut it up so you’re not going to have half an apple, you know, sitting there or whatever. But, um, same with the celery. It’s nice that it’s like one full piece of celery that you can put in there. And we’ll start with a tablespoon of mayo. Again, making it for a video and a recipe, I’ll measure. Otherwise, I usually just take some knifes and plop it in here and mix it up until I think it’s the right consistency. because I also think that again, I know I’ve made this one before, but I think I’m going to need more mayo in there. So, there we have it. Looking all nice and pretty. Got all these nice, healthy, fresh ingredients. And we’ll go ahead and mix this all up. Try to coat everything with that at least a little bit of mayonnaise. Get that curry powder all mixed up in there. I think with the curry powder too, sometimes for me it’s a little strong, so I usually use a little bit less of that spice. But I know that’s a big a big spice in a lot of dishes. People like to add the curry. So everything is basically well coated. It’s not um real mushy. Like it’s not like a tuna salad or a chicken salad where it’s a whole lot of mayo. I think I’m going to add just a tad bit more. It was a big apple. So, another another almost a tablespoonish probably. So, again, we’ll get that to the consistency we like and then we’re just going to serve it up on some leaf lettuce. So, we’ll make kind of a lettuce roll type sandwich. Or you can serve it on a piece of bread, piece of toast. I just made the tuna carrot tuna carrot salad. Carrot tuna salad the other day. And I had that on a piece of toast. It was so good. Yep. Once again, I start making these more healthier recipes and I go, “How come I don’t make this more? This food is so delicious.” Got to get back into it. It’s easy. Get these few ingredients. Like I said, I we usually buy chicken every week. usually have apples in the house. Same with the celery to do my juicing and the mayo and all that. All right. So, we’ll go ahead put this on the lettuce leaves. Or again, you can either put it on, you know, the lettuce leaf and also have it um on your piece of toast. I usually like to have lettuce with my on my sandwiches, whatever I’m having, whether it be a hamburger or like a sub sandwich. I like my lettuce. My husband will go without. If I’m if I’m making the food, I’m making the dish. I always I put lettuce on his sandwiches. I’m like, you need some vegetables. When he makes everything, it’s it’s just that just the meat. All right. Was I figured if I’m going to do it this way, this is a whole lot of food for just a couple lettuce leaves, even for toast. This will make for a couple different meals. So, that’s always nice, too. I like having leftovers in the fridge that again when I wake up or I’m in the middle of something, I’m getting a little hungry, I’m like, “Oh yeah, hey, I’ve got a little salad in the refrigerator I know I can just grab and it’s good to go.” And I don’t have to take the time to make it, be ready to eat. So, the curried chicken Waldorf is finished, like I said. So, it’s nice if you’re watching your carbs, you’re gluten intolerant, you want to try to find something to eat without bread or a nice simple like salad, this is a good recipe. So, serving it on a bed of lettuce or a lettuce leaf, you can try to wrap or again, you could put it on a bun, croissant, toast, bread, all those good options. Um, I haven’t usually had lettuce wrap stuff. Oh, pita the pita bread. I’ve done um some of my salad type stuff in that and that is so good. I should take another lettuce leaf and wrap it on here. Let’s see if I can try to pick this up and eat it if it’ll all fall out. How messy it will be. Probably better if I eat it with a fork. Thought that too. You can just even, you know, put a bunch of lettuce in a bowl and have a salad and then just put this on top. Yeah, my fing just all fell out. I still have my gum healing. Got two on the side. It’s all very tasty. Pretty good. Oh, too messy to eat this way for me. But I have that lettuce still in there, but get the chicken that crunch of the walnut. You sweetness of the apple. It’s good. Curry pow p p p p p p p p p p p p p p p p p p p powder isn’t too overpowering for me. Once again, I know I’ve made some some stuff before, some other recipes that it was like that was a little much. So, need to remember to adjust it for me. But in any case, I’ve seen other recipes. I’ve seen stuff in maybe in restaurants. I’m going to have lettuce stuck um where people have the big big leaf lettuce and you wrap it all up and you have the lettuce sandwich. I keep looking for those really big lettuce leaves in the store. I don’t find them. I guess there is the um the Roma cuz I do use those for my salads. But it seems the other lettuce leaf is more wide, more like, you know, a hand. But in any case, this was a little bit bigger, different lettuce that I found in the store. I thought that’ll look pretty, that’ll look good. So anyways, I hope you enjoyed this recipe. I am going to go finish enjoying my lunch.   2. Love this salad and also like using lettuce leaves. I sometimes substitute Greek yogurt for mayonnaise. My husband does not, but it’s great weather way. Thanks for sharing.

  3. Looks good Jenny! My mother made an apple salad and banana salad with a dressing she made on the stove. I hadn’t thought about that in awhile, I’ll have to look for that recipe! Have a great weekend Jennie!
