On a whim, I bought a 10 oz cut of top sirloin from Snake River Farms. Usually, I prefer fattier cuts, and in my naïveté I’d avoid leaner cuts, like sirloin, like the plague. So imagine my surprise when I see a beautifully marbeled Prime top sirloin at the grocery store. “What the hell, it can’t be too bad, let’s give it a go” I thought.

I now see the light, and I’m never going back. So much more affordable than strip or ribeye of equal or even lesser quality (I paid $13 for this particular steak at $20/lb while it’s not unusual in my area for Choice ribeye to be >$24/lb ). I managed to cook this beaut to a near perfect medium rare. It was so tender and delicious, it’s found a spot in my regular rotation. Reverse seared on a stainless steel pan. Internal temp was ~130 two minutes after I took it off the heat. All around, it was certainly one of the best steaks I’ve ever cooked

    Great lean cut. My daughter loves steak but hates the fat (kids, am I right?), and this is basically all she’ll accept.

    This is also referred to as picanha and it’s a treasured cut in Brazilian cuisine. It’s picking up in popularity lately, though many folks have been fans for years.

    The flavor of the fat is unique to this cut and tastes amazing.

    Picana is THE most sought after steak in Brazil it’s their specialty, it’s gotta be cooked just right but I’m telling you once you try a very well prepared one you will NEVER go back to anything else, if by chance your in Brazil le get the cheesy bread too their both delicacy’s there 🙂
