Hello everyone! Let’s start a new day full of energy. For breakfast today, I made a simple but delicious sandwich. The ingredients are eggs, sausage, cheese, lettuce, tomatoes and a few slices of bread. First, I scrambled the eggs with a little seasoning. Sliced tomatoes. I like to eat raw tomatoes because the sour taste is very appetizing. This dish needs to be cooked over low heat. Spread the eggs evenly on the pan, then place two slices of bread on top when the eggs are still soft so that the bread and eggs stick together. Then flip the bread over, then arrange the sausage, cheese, vegetables and tomatoes on top. Fold the pan-fried bread in half until both sides are golden brown. Let’s see the results! Make another portion, this time replacing the cheese with mayonnaise and chili sauce. I like it a little spicy. So the quick breakfast is complete. Drink it with plum syrup made last week, just the right amount of sweet and sour, very delicious mixed with drinks. Now let’s eat. We just went to buy vegetables. I found a place that sells many kinds of fresh and cheap Vietnamese vegetables, so I bought a lot. A refrigerator full of vegetables. In the afternoon, we went to the park near our house to play badminton and exercise a little. We are both passionate about this sport, but we are both busy these days so we don’t have much time. My husband just tried playing shuttlecock, it seems to be a good fit, so we played quite quickly. We even bet on who can kick more. And… this is the face of the loser. 🙂  Let’s rest a bit and then go home to cook dinner. Tonight we eat rice paper rolls with raw vegetables and herring fish cakes. I made the fish cakes at noon, mixed with green perilla leaves to remove the fishy smell of the fish and bring out the aroma. Instead of frying them directly, I put the fish cakes on thin rice paper and then fry them. This way the outer layer is crispy, but the inside is still soft and chewy. Make an extra bowl of sweet and sour coriander fish sauce to dip with. Tonight we drink lemon sawa soda with a little alcohol, it’s very pleasant to drink. Everything is ready. Let’s have dinner with us! This is Hoa Da rice paper, a specialty of my hometown – Phu Yen. Smooth, chewy and fragrant. Whenever I return to Vietnam, I bring some to eat to ease my nostalgia. Rice paper rolls are a very familiar dish to the people of Phu Yen, they can be eaten for breakfast, lunch, afternoon, and dinner. They are delicious with anything. Simple but rich.
