The word khubz comes from the root خ-ب-ز (kh-b-z), which relates to baking. In classical Arabic, it simply means “bread,” but over time, it came to represent this specific style of flatbread in everyday use.
Traditionally, it’s baked in a clay oven called a taboon or saj, or even a tandoor in some regions. In modern times, it’s often baked in home ovens or bakeries on hot stones or steel plates at high temperatures.

The high heat creates steam inside, causing the bread to puff up and form a pocket, which makes it ideal for stuffing with meats, vegetables, or spreads.
