I firmly believe that I am not the only person who’s shown up to the airport hungry, spent $50 on a burrito, and left 17 vegetables behind to rot in the fridge. But I’m proud to report that I’m older and slightly wiser now. Before leaving to visit my parents last week, I pulled together this like fridge cleanout green bowl, and it accidentally turned into one of the best meals I’ve made in a while. The grilled halumi gets marinated in lime, chilies, and pickled shallot, and it only gets better the longer it sits. I tossed it with fresh herbs, crunchy veg, chewy grains, and a drizzle of yogurt sauce, and it travels well, but it also holds up in the fridge for days. It’s just as good on the plane, in a deli container, or eaten standing at the counter with a spoon.

  1. I love prepping freezer meals before a trip. Uses up whats in the fridge so nothing goes bad and leaves you with quick, yummy, homemade food when you get back and just dont want to cook

  2. Genuine question, how do you take this on a plane? Don’t they take everything above a quart size bag of liquid? This seems to have a lot of liquid or things that TSA would make you throw out before going through security
