    Per Alton Brown’s recommendation (also USDA), I got a separate cutting board and wrote “POULTRY” in sharpie on it so it is only used for that. I usually dry the chicken with paper towels before cutting, too.

    Ask her if that’s how her family did it when she was growing up. I used to let paper towels dry in the bottom of my kitchen sink so they’d be less wet going into the trash can until a friend told me it was “nasty.” I’d always seen my mother do it growing up so to me it was a normal behavior.

    who gaf? as long everything is being cleaned and sanitized, I dont see a legit issue. People literally cut poultry on there bare ass counter. Its called a paper towel (fresh/clean) and a Clorox wipe. It’ll be fine.

    Get her a glass or metal cutting board. I know the uneasiness of cutting raw meat on wood cutting boards (and I have cleaning them, I have few because you pretty much have to clean them soon after use), and unfortunately plastic cutting boards have so many pockets for more contamination and leech tons of microplastics. I bought glass for this and it’s so much easier to throw in the dishwasher or clean by hand. I want to try metal or those expensive “wood” ones that you can throw in the dishwasher.

    Unless I have a lot of meat and vegetables to cut I’ll use a paper plate. One less thing to wash while cooking.

  22. Only upside is you usually want your chicken dry when it hits the pan so it browns instead of steams. So itll kinda dry it as she goes.

    I use a plate to cut any sort of raw meat then put it a sink with hot water and dish soap

    and I’ll use paper towel to soak up most of the liquid and put that in a kitchen compost bin.

    Part of me sees the logic in this. While ideally, you should cut protein on a plastic cutting board, plastic cutting boards may not get totally clean after use and you will likely have to toss them out after a while as they are so cut up. Assuming that even if you are using a plastic cutting boards, you will also have to wash all surfaces after doing food prep, it might make sense to cut on a surface that is disposable.
