I eat so many long beans. The neighbors no longer want them because they’re still working through last week’s harvest. They are still producing furiously. I am afraid.

    I do not like how they taste as green beans, so I allow them to mature and dry out. I use the dried beans instead.

    One of my favs! My family uses them to make thum mak tua, a Laos dish where you crush garlic, hot peppers, and slightly crush tomatoes, then add lime, sugar, msg(optional) and fish sauce and throw the beans in! It’s similar to papaya salad (thum mak khung) but just beans instead of papaya

    I have the same problem. This is the first year growing them on a semi large scale. Do you taste the difference between long and 10-12” length beans? My mom tells me to pick them when they’re short.

    Do not fear. They freeze well.
