Ingredients
➡️ 1 ½ cups black-eyed peas (dry)
➡️ 1 cup corn (cooked)
➡️ 3-4 green onions
➡️ 1 bell pepper
➡️ 1 red onion
➡️ 1-2 tomatoes
➡️ bunch of fresh parsley
➡️ 4 tablespoons vinegar
➡️ ¼ cup extra virgin olive oil
➡️ salt & ground pepper

Add 1.5 cups of black-eyed peas to a pot with boiling water. Boil for 25-30 minutes until fully cooked. Chop 1 red onion. Rest in cold water for 10-15 minutes. Cut 3-4 green onions into slices. Cut 1 red bell pepper into cubes. Cut 1-2 tomatoes into cubes and add to the salad bowl. Add a bunch of fresh parsley, roughly chopped. Add 1 cup of cooked sweetcorn. Add the cooked black-eyed peas.
