All this happened over last night and today! I'm so excited, currently just the one plant has peppers ripening hope others follow suit shortly. How long can I leave these on the plant, I was hoping to just harvest when all are ripe? I've been freezing my jalapenos as they get to a good size as my tomatoes aren't ready yet so I can't make salsa, should I just do that with these? Planning to make hot sauce so it doesn't bother me that they won't retain their crisp. Lastly, the third picture 2 of my scotch bonnets are getting pods that are more elongated and a bright/light green what's up with that? They came out of the same packet (which I got from Pepper Joe's before knowing) and I kinda wonder if they aren't something else. I had one ripen to orange so that fits what these are doing.

Also, don’t mind the spider web in the 3rd picture seems each plant has itself a resident daddy long-leg for pest control 😀

In my uneducated opinion I’d wait about 2 weeks after the first one is fully ripened and then pick a huge bunch, even some that are half green because they will colour up even after they are picked. The more u pick, the more that will grow anyway. They look good.
