    I’m curious as to why you used white oak and not hickory or another more flavorful wood? I’m not judging or anything, I’m just wondering what kind of flavor you were going for.

    As an aside, I’m curious if anyone has tried smoking with Spruce or Birch. What flavors do these produce?
