8 large eggs (or 10 small eggs)
3 ripe tomatoes (any type)
Salt (to taste)
Black pepper (freshly ground)
Olive oil
Extra virgin olive oil (for flavor)
Grated mozzarella cheese

Ciabatta bread (cut in half lengthwise)
Fresh coriander (finely chopped)

🍳 How to Make Juicy & Cheesy Tomato Egg Omelette with Grilled Herb Ciabatta:

1. Prepare the Bread
Finely chop a handful of fresh coriander.
Mix it with extra virgin olive oil and a pinch of sea salt.
Brush the oil mixture generously onto both halves of the ciabatta bread.
Grill for 3–4 minutes until golden and crispy.
2. Make the Omelette
Crack 8 large eggs (or 10 small ones) into a bowl.
Add salt and a good grind of black pepper.
Whisk thoroughly until smooth and airy.
3. Cook the Tomatoes
Slice 3 juicy tomatoes.
Heat olive oil and a splash of extra virgin olive oil in a pan over medium-high heat.
Add the tomatoes and cook until one side starts to soften slightly.
Flip the tomatoes.
4. Add Eggs & Cook
Pour the whisked eggs over the tomatoes.
Season with a little more black pepper.
Reduce heat to medium-low and cook for 3–4 minutes until the bottom sets but the top still has a jiggle.
5. Add Cheese & Grill
Sprinkle generously with grated mozzarella and cheddar.
Transfer to a grill (180-200c) and cook for 4–5 minutes, until golden, bubbly, and fully set on top.
6. Serve & Enjoy
Cut into slices and serve hot with the crispy, herby ciabatta bread.

Served with chia bread brushed with fresh coriander and extra virgin olive oil. Have my bread here. Just going to slice the baguette. And now I’m going to get some coriander. Fresh coriander is always better. You can always use dry coriander, but I don’t think it tastes as good. Just going to chop them. Just going to put them in a small bowl. We’re going to add extra virgin olive oil and a pinch of salt. Now we’re just going to get our baguette. And we’re just going to put it over. You can be generous. Just put as much as you like. So these will go into the oven. We’re just going to grill the top. You can’t really go wrong with making an egg omelette. Going to start by cracking eight eggs. Last two eggs. [Music] Season with salt and black pepper. I think this is good. Our eggs are done. Just set them aside. So, we’re going to get some fresh tomatoes. Slice up three fresh juicy tomatoes. Any type will do. Cook them in a hot pan with olive oil and some extra virgin olive oil for flavor. Once one side is softened, flip the tomatoes and pour in the eggs. We’re going to cook these for about 3 to 4 minutes and then we’re going to finish them off under the grill. After putting the cheese on top, we’re going to turn the heat off. Going to sprinkle the cheese. You can put as much as you like. I think that’s enough cheese for one day. We’re going to finish this off under the grill for about 3 to 4 minutes. So, our baguettes are ready. Set a timer for 4 minutes. Just going to check these baguettes and see how crunchy they are. I think we are ready. And we got our egg omelette. Now all we have to do just [Music] slice it. Looks perfect. So I’m going to get few parsley leaves and we’re just going to chop them by hand and sprinkle them over.
