These lemon Greek potatoes are my absolute favorite. They’re cooked in chicken stock and lemon and they absorb all these delicious juices and they simply melt in your mouth. We’re going to make a quick marinade by mixing chicken stock with some lemon juice, garlic, olive oil, salt, pepper, and some oregano. Mix until well combined. And then we’re going to peel and cut our potatoes into wedges. Drench them into the marinade and cook at 400 for about an hour as you flip once halfway through. And then devour.
