Hummus, a traditional Arab dish, has become incredibly popular worldwide due to its delicious taste and versatility. Originating from the Middle East, specifically Lebanon, Palestine, and Syria, it has become a staple in many cuisines around the globe.
Made primarily from cooked and mashed chickpeas blended with tahini (sesame seed paste), olive oil, lemon juice, garlic, and various spices, hummus offers a unique combination of flavors that tantalize the taste buds. Its smooth and creamy texture makes it an ideal dip for pita bread or vegetables, while also serving as a delectable spread for sandwiches or wraps.
To prepare your chickpeas for making hummus, start by soaking 1 pound of chickpeas (garbanzo beans) overnight with a teaspoon of baking soda. Soaking the beans activates enzymes that aid in digestion and reduces cooking time. The baking soda helps break down proteins in the beans, making them softer and more absorbent.
The next day, wash and boil the chickpeas until they form a high foamy peak. Strain the first boil to remove unwanted particles that can be difficult for the body to digest. Continue boiling the chickpeas until they are overcooked and resemble mashed potatoes.
Cool the chickpeas and store them in the refrigerator or freezer. If freezing for later use, reduce the cooking time, wash the beans, remove excess liquid, and store in a Ziploc bag.
When ready to make hummus, use a food processor or blenderIn a food processor I’m using a Robot Coupe it’s a commercial full processor, or if you have @ninjakitchen food blender let’s prepare our hummus.
5 c hummus
1 tbsp salt
2 tsp citric acid
Or 1/4 c lemon
3 cloves garlic
1/2 c @tazah tahini
1/2 c ice
2 tbsp @mina olive oil
