I recently went to a all-you-can-eat 곱창 place and absolutely loved it.
I know that people either like it or hate it. Have you tried it before?

They have to be cooked to be very crispy and the sauce needs to be on point. Very decadent, very fatty, but great drinking food.

I tried it around 5 times, hoping it would grow on me. I wanted to like it but I didn’t.

Boiled version – don’t like it because usually it still stinks. Then on top of that chewy to very chewy depending on what type of intestines.

Fried or deep fried – edible to me. Does not stink, and a lot less chewy.

Note: this is for any Asian cuisine serving intestines, not only Korean.

  4. Love love love! My friends and I would order for 2 or 3 servings each plus raw liver and blood soup.

  5. I haven’t had it specifically to Korean food (only chinese food) but in general I love it. Taste and texture is so satisfying.

Oh my god it’s my favorite. 곱장, 막장, 대장…the best!

I had it fried at a BBQ restaurant, not expecting to like it but felt I should give it a go. I was pleasantly surprised – thought it was really tasty, albeit very chewy!

I don’t personally like it when it’s boiled. But when it’s fried I love it, great drinking food.

When done properly, it was incredibly yummy.

  10. One of my favorites when grilled.

Love to get intestines from Mexican taco vendors, too. They get so crispy on the plancha

Haven’t tried it yet, where can I get one??

Love it when my mom broils it or grills it in her turmeric and garlic sauce with a bunch of betel leaves, yummm the outside is extra crispy while inside is still chewy.

But I don’t like it boiled or in soups and stews. It’s okay stir fried but it needs a good sauce.

Thats daechang (big intestine) and chadol. Most people prefer daechang over gopchang (small intestine) because its just a fatty delight. Over time gopchang starts to taste better, but a lot of people dont like it because of the grainy texture.

Obaltan for offal in Korea is the best. Expensive, but no other place I’ve been to hit those levels. Get the combo offal plate forget everything else.

It’s either $60-$80. I really want to try it though!

  15. haribobosses

always amazed by how much fat pours off of it.

oh, I once had a soondae stuffed into a gopchang (or was it a makchang) in Daegu yowza

I had it in the basement foodcourt of the Lotte dept. store in Myeong-dong. I liked the taste but it’s extremely heavy and I would describe it as ‘cholesterol-y’ tasting lol. I couldn’t finish it but I’m glad I tried it.

I’ve only had it as tripe in Mexican menudo

  18. Love all the changs.

And the raw tripe and liver you get as a bonus

  19. catchmelackin

childhood food for me. love it and will eat it anytime there is at a restaurant

  20. Feeling-General7542

Love it! Feels like I’ll get a heart attack or hypertension every time I eat it, though? ㅠㅠ

  21. dillp1ckle

Obsessed with it. Especially alongside cold noodle. Looking for the best one in the Bay Area.

  22. SqAznPersuasion

I gave it a few tries (boiled and fried) something about it just didn’t strike me right. I don’t hate it, but I definitely don’t love it. Very mid in my opinion.

  23. firephoenix0013

Personally I really hate it. I can choke it down if a well meaning 선배 takes us out to eat and pays for it but I have to smother it in sauce and other things like veggies and other meat. But I cannot stand the texture…

  24. bubblyintkdng

Tried, was bit grossed out about eating intestines (I know I know very hypocritical on my part), drank a lot of soju to overcome my fears, got really drank, vomited in the hands of my now husband in the middle of the subway, and then went to a park and cried because no one had taken such good care of me before.

After that, I have never eaten them again. I am traumatized by the whole experience.

It REALLY depends on how well the chef knows how to clean it. It will still be kinda “barnyard-y” but it should be barely noticeable if done correctly

  26. Rotton_Banana

I had them at a KBBQ place and didn’t like them it was like flesh-chewing gum

  27. poshbanana

Can someone tell me if my assumption is correct? 곱창=small intestine, 대창=large intestine, 막창=large intestine. I want to try grilled small intestine but I don’t want to have any large intestines. If I only order 곱창, I won’t get served large intestine right?

  28. _chiffonade_

If you eat sausage, and unless indicated otherwise, what do you think holds it together? (Answer: Intestine.)

  29. SeaDry1531

I have not had a good experience with intestines in Korea or Thailand. 🤢

  30. _chiffonade_

PS there’s very little I will not eat. I like offal (the generic term for innards) and I am great fun at dim sum. I like to see the shocked look on the waitstaff’s face when I order chicken feet and tripe.
