How do you turn this pineapple into sis? You’ll want to see this. Cut the pineapple like this. Scoop out all the juicy meats. And there you have it, a natural serving bowl. Chop the sweet pineapple into small cubes. As much as you like. But don’t go crazy. I will tell you why in a second. Growing up, my family grew pineapples all over our land as a fence. Hundreds every seasons. Small but incredibly sweet ones. Every summer, I help peel and sell piles of them at the market. Back then, you could buy a whole bag of 50 pineapples just for £1. Can you imagine that in the UK? Here, pineapples are imported and not as cheap as in Vietnam. But when summer hits, they are so sweetest, so grab them while you can. Now, back to our dish. When the rice is about 80% done, splash in some soy sauce. Toss in those sweet pineapple cubes and stir it all together. Don’t add too much pineapple or the rice will get soggy. Finish with a handful of finely chopped spring onion and a pinch of black pepper. Scoop it back into the pineapple shell. And there it is. Vietnamese pineapple fried rice.
