  2. Looks like huitlacoche to me! Had in on an quesadilla once in a restaurant, tasted amazing! Wouldn’t know how to prep it for consumption myself though, but if that was my corn, I’d try to find out.

    I think it’s considered a rare delicacy, some type of corn fungus you can eat but I’ve never seen it in real life

    Yes, as others have said: huitlacoche, also known as corn smut (both of which are so fun to say!) Very much a delicacy, if you know what you’re doing. I do not.

    So I googled it and it is apparently a rare delicacy. So I suppose I’ll figure out how to sell it, cause I don’t want it

    Huitlacoche! I get it every year on my corn and I love it. It’s really good if you do a quick sauté with some onions and then make a quesadilla. It’s earthy but sweet with a touch of funk. I love it!

    I don’t know if that looks like huitlacoche, it looks like a demon to kill with fire. 😳

    (But huitlacoche is super popular in Puebla, every restaurant you walk into sells it. I dunno that I’d consider it any rarer than like truffles… which aren’t really that rare at all.)

    Huitlacoche! It’s delicious. Some people expressly go out of their way to inoculate their corn with it.

    All these horror stories, I was just thinking to myself the other day, besides potatoes, corn is the easiest thing I’ve ever tried to grow. Must be my area.
