I made a total of 48 breakfast burritos, 36 chicken burritos, and 12 bean burritos. Recipes in comments. These are some of the best burritos I’ve made in a loooong time! We gave about a quarter to family and vacuum sealed and froze the rest.

For the breakfast burritos, the second and third picture, here’s my recipe. I do this in stages so I’m not cooking everything on just one day. Prep may take 1-2 days before I assemble burritos. We are fortunate to have a chef store close to us, which has bulk fresh items at a great price. If you want to add bacon or sausage, go ahead. We used sautéed mushrooms instead of meat because my SIL doesn’t eat meat. Each burrito ended up right around $1.65
For the eggs:
48 eggs
3 cups cottage cheese
Homemade chicken bone broth powder (I freeze dried it)
Freeze dried pinch of dill
2 tsp thyme
Salt
garlic powder
Onion powder

I then used an immersion blender until the cottage cheese in the eggs are smooth. Cooked scrambled eggs in batches

3 lbs Baby Bella mushrooms, sliced
Onions
Butter
Garlic powder

Sauté mushrooms and onions in a small amount of butter

3 lbs Anaheim peppers, diced
Onions
1 can Green enchilada sauce

I cook these down for a few hours until it reminds me of canned diced chilis.

Hash browns

cooked until crispy (we love our chef store, we got 20 lbs fresh raw hash browns on clearance for $5.

Cheddar and Monterey Jack cheese, shredded
48-12 inch tortillas
Chicken burritos-to cook the burritos, we use an air fryer on defrosted burritos until tortilla is perfectly crisp and insides are hot. Each burrito ended up being $1.20
Chicken mixture
•2 rotisserie chickens, pull chicken off and save carcasses in freezer for chicken bone broth
•3 lbs Anaheim peppers, diced
•1.5 lbs diced onions
•1 can green enchilada sauce

Cook down peppers, enchilada sauce, and onions for 2 hours. If you don’t want to skip all this prep, just use canned diced green chilis. Mix together with chicken

Cilantro lime rice (or plain or Mexican rice, you make it how you like your rice. I like the acidity the lime rice adds though)

•shredded cheddar cheese
•48-12 inch tortillas
My SIL doesn’t eat meat, so for 12 of the burritos, I added black beans and the green chilis in place of the chicken.
