Partner got lucky on the Kenai and caught 6 in just over an hour yesterday.
Home made Teriyaki brine for about 15 hours. Basting the smaller pieces with maple syrup every hour for salmon candy.
Edit to add more details:
Using a little chief so no tempurature control beyond the amount of wood I put in. I’m using a mix of applewood small chips and larger chunks. I’ll probably do 3 or 4 panfulls, taking out the smaller pieces as they’re done. The candy is done real quick.

Can you shade smoking details like time, temp, wood etc? Looks great!

Amazing, how do you cut and portion these after smoking?

That’s a beautiful spread. Great job by your friend, I’d give a nut to fish the Kenai

That’s awesome, mate! Wish I could do this without spending half a paycheque on 2 pieces of farm salmon.
