First time trying cold noodles! Hiyashi Chuka – cold egg noodles with citrus sauce, kanikama, tamago, menma, tomato, cucumber and nori 😋 It was amazing in this oppressive heat.

That looks really tasty! We had chilled spicy tonkatsu ramen once at a place in Manhattan near Broadway, and it was a revelation! The broth and noodles were cold, and had things like bean sprouts, shredded carrots, and matchstick cucumber, and then warm spicy ground pork along with it. Amazing!

Add lots of Kewpie mayo and karashi mustard!
If you wanna make it at home, just get regular fresh ramen and cook as directed. Add lots of veggies and ham and egg and sauce is :
/ Half cup soy sauce
/ Half cup rice vinegar
/ 2 tbsp sesame oil
/ 2 tbsp Toubanjan (豆板醤) (Optional)
/ 1 tbsp sugar
If you want it to be milder flavor, make rice vinegar 1/4 cup and add 1/4 chicken broth (or broth of your choice)
Some people cook the sauce and chill it after. I like stronger punchy vinegar flavor so I just use it as is.
