  2. nice looking pancakes. You can do 2 ingredient pancakes with mashed ripe banana and quick oats, which might get you more fiber and a slightly different variety of minerals and vitamins. I also think you can’t go wrong with a scrambled egg or even a tofu scramble on the side to add a little more protein, but I’m not a big yogurt person.

    Great looking breakfast. I usually have half a toasted cinnamon raisin bagel with fruit and a bit of peanut butter.
