    I’ve been making baked oatmeal in the form of muffins for a little while now, but after some feedback from my fiance and 9yr old son I was on a mission to make something fluffier and less blatantly health food like? Took what I knew with my baked oatmeal muffins and a few other protein muffin recipes and threw these together.

    In addition to the ingredients shown in LoseIt also added **2tsp baking powder, 1tsp salt, and 1tsp vanilla extract**

    Combined dry ingredients then added wet. Sprayed muffin tin with oil and baked at 350 for 20min.

    They’re genuinely fluffy and my fiance said they tasted amazing and my 9yr old came back for 2nds

    I think when I do them again, I will fill the cups up less because they did fluff up quite a bit, and just have more muffins.

  3. Are they dry like the old protein pancake recipes that are just protein powder and egg and cream?
