This salad hits on all levels. Its Greek inspired and is my go to healthy lunch. Salad jars will make your week so much easier to eat healthy!

Ingredients:
Greek vinaigrette
Chickpeas
Cucumber
Quinoa (precooked)
Bell pepper
Artichokes (I buy grilled ones from Trader Joe’s in a jar and drain them)
Kalamata olives
Feta

Greek vinaigrette:
Olive oil
Lemon
Red wine vinegar
Oregano
Salt & pepper to taste

Instructions:
Chop all veggies into small bite size pieces. Layer your jar with Greek vinaigrette, followed by chickpeas, cucumbers, quinoa, bell pepper, artichokes, Kalamata, olives, and feta. Store in fridge for up to 5 days.
