πŸ‡¬πŸ‡· Easy Greek Pasta Salad β€” light, fresh, and packed with flavor!
This is one of my favorite quick and easy pasta salads to make for lunch meal prep, cookouts, or an easy summer side dish. I use protein pasta to give it a little boost, and it’s always a hit! πŸ™Œβœ¨

πŸ₯— Ingredients:

1 (16 oz) box rotini pasta (I use Protein+ pasta)
1 Β½ cups halved grape tomatoes
1 Β½ cups diced cucumber
Β½ small red onion, thinly sliced
1 cup crumbled feta cheese
1 cup Greek salad dressing (more or less to taste)

πŸ‘©β€πŸ³ Directions:
1️⃣ Cook pasta according to package instructions. Drain and rinse with cold water.
2️⃣ Add cooked pasta to a large bowl.
3️⃣ Toss in tomatoes, cucumber, red onion, and feta.
4️⃣ Pour Greek dressing over everything and mix well.
5️⃣ Chill before serving, or enjoy immediately!

Optional Add-Ins: Sliced kalamata olives, grilled chicken, or fresh parsley πŸ‹πŸ«’

This is the perfect summer pasta salad. You guys have to try it. First, cook up your pasta. Dump it in a big bowl. And I usually let it cool just a little bit. Next, I add in tomatoes, purple onion, cucumbers, and feta cheese. And then, pour in your favorite Greek salad dressing, and mix it all together. You can serve it right away or you can throw it in your refrigerator and serve it later. This pasta salad is great for gatherings or even as a side for family dinner, but be sure to save the leftovers in the fridge and eat on it for a few days.   6. You could also add peppers, olives, radishes and spring onions. We love all these vegetables /ingredients in Greece.
