Hello & happy Thursday!
Today I went grocery shopping and prepped some ingredients for Saturday (my meal prep day) and lots of extra chicken for the freezer for future preps. I LOVE to cook but don’t like when it becomes overwhelming and dreadful, so having an ingredient prep day really helps me enjoy the cooking process when that day comes.
Here’s what I prepared:
Broccoli (for Saturday’s stir fry meal prep)
Broccoli (extra for the freezer)
Bell peppers (for Saturday’s stir fry meal prep)
Bell peppers (for Saturday’s veggie jar snack prep)
Carrots (for Saturday’s stir fry meal prep)
Celery (for Saturday’s veggie jar snack prep)
Gravy chicken (for Saturday’s chicken, mashed potatoes, gravy, corn meal prep)
Stir fry chicken (for Saturday’s stir fry meal prep)
Cajun chicken bites (for another week’s prep of a cajun chicken vegetable skillet)
Cajun chicken strips (for another week’s prep of cajun chicken alfredo)
Italian marinated chicken (for another week’s prep of chicken, roasted potatoes, green beans)
Salad chicken (for another week’s prep of chicken caesar salads)

– **Only make one meal that requires a lot of chopping or various cooking methods**. This week my stir fry has lots of veggies. My chicken & gravy meal uses frozen corn, easy peasy! I’m also making spaghetti & meat sauce, no chopping needed there! To supplement some veggies, I cut up some celery and bell peppers that i’ll combine with baby carrots to make little “veggie jars” with ranch dressing.
– **Utilize anything that can be cooked in a “hands-off” way** (steam in bag veggies, pre made microwaveable mashed potatoes, oven baked foods, rice cooker)
– **Minimize dishes!** For example, are you cooking in an air fryer? Line it with tin foil so you don’t have to clean it. Cooking on a sheet pan in the oven? Same thing, line it with tin foil.
– **Plan ahead** if you can, it really does help. Going in to meal prep day unprepared can cause a lot of anxiety and make your mind scatter when you’re trying to focus on the task at hand! Make a list so you know exactly what needs to get done! You got this!
