I’m guessing you cooked it cold. That fat never got a chance to render. Need to let it come to room temp or you get a result like this.
Also, let it rest. That allows oil to drip off and allows the fibers to tense back up and keep that juicy juice inside the steak.

I tried it a couple of times in the restaurant because American’s can’t shut up about how good their medium or rare steaks are… I’m no American, confirmed doubly so because medium is never tasty to me and any time I had it I had to kill the taste and texture with some sauce on hand and bread or something. 😛
Well done or take that raw piece of meat out of my plate.
But yes, for other people, I’m sure it’s fine. 😉 Apart from scoring it. Not sure why you’d do that to a steak.

I find it so amusing people complain about this yet happily would wolf down the same food at a bbq where who knows what bugs touched that food or plate.
