Trying to cook a smoked dish from each state in the US, started with Alabama. I'm fairly new to this, so it is to learn different techniques more than anything, who knows if I stick it out till the end.

This turned out pretty amazing ngl!
It was a standard spatchcocked chicken with some spg+paprika cooked at 325-375 on my offset. Topped it with the white sauce from Alabama (mayonnaise, apple cider vinegar, horseradish, black pepper, garlic powder, mustard, honey (in place of brown sugar)).

Alaska calls for salmon, which requires cold smoking from what I read. Might end up not doing it alphabetically because I have no idea how to do that specially in the summer.

    Never tried making it myself because I hate mayonnaise so much. I’ve tried it at a few bbq places and didn’t like them. I got mayo flavor from them all (or I had in my head that I would, making them gross).

    So, if anyone who hates mayo actually likes their recipe, with other ingredients in it that masks the flavor, please share!

    I made some myself tonight. Alabama white sauce is the shit! I roasted a quartered chicken and just before it’s at temp I just dunked them right in the sauce and back on the grill. When I pull them out I dunk them in again and plate.
