I think you meant potato pavé. Confit is to cook something in (usually it’s own) fat at a low temp for a longer duration to tenderize the food being cooked. Confit potatoes are usually just cut in large chunks, then submerged in the fat to cook. Regardless, your food looks delicious! 👌
