New Spanish tapas restaurant to replace Italian restaurant Tre on Carmel’s Main Street

Matador, a lively new Spanish tapas restaurant, has announced its grand opening in Carmel, slated for late August 2025, located at 10 E. Main St. This opening will take the place of the former Italian eatery, Tre, whose last day of service will be Friday, July 27. This will be the fourth restaurant owned by Chris Evans, the founder of the multi-site Sangiovese Ristorante.

Ambrosia Hospitality Group owner Daniel Cage will share Matador’s inviting and electric ownership with Evans. The pair plans to bring their combined passion for hospitality, divine cuisine, and savory ambiance to the prime location at the corner of Main Street in Carmel. Matador will seat 120 inside and 50 outdoors, including a private dining room and a full bar. The menu will be unique from Ambrosia and Sangiovese’s Italian cuisine, featuring flights of Sangria and classic Spanish tapas like Patatas Bravas, Paella, and Pan con Tomate.

“Matador is a reflection of everything I’ve learned over the years – how design, flavor, and energy come together to create something people remember after the meal is done,” Evans said. “We are excited to bring flavor, passion and vision to this space. We want people to feel refreshed and inspired after dining with us.”

While former restaurant Tre offered a fresh option in the northside space, it ultimately did not resonate as intended. Matador will replace Tre as a bold new concept for Carmel residents, offering a casual-chic dining experience with a Latin-Euro flair. Restaurant developers Evans and Cage aim to reenergize the location with a vibrant new identity, featuring a thoughtfully curated atmosphere, elevated Spanish-inspired cuisine, and dynamic bar offerings, showcasing a deep commitment to authenticity and guest experience.

Sangiovese has been a staple of Indianapolis’ fine dining scene since 1994, starting with its first location at the River’s Edge shopping center. In 2015, the restaurant relocated to the Ironworks building at Keystone and opened the second location at the Yard District in Fishers in January 2020. Ambrosia was founded in 1979 with a mission to consistently provide high-quality, traditional Italian cuisine while continuing to be innovative. Since taking ownership in 2019, Dan and Anna Cage have expanded the restaurant group and are the creators of Indianapolis favorites like Bocca, The Commodore, and more.

Matador will be a symbol of combined creativity, serving as a welcoming location for all ages, bringing a savory and colorful social elegance paired with shareable crowd-pleasing experiences.

Starting in late August, Matador will welcome guests seven days a week, from 4 to 10 p.m., inviting patrons to indulge in unique Spanish-infused dishes at the crux of Carmel. All current or outstanding gift cards for Tre will be honored at Matador. The new restaurant plans to hire new team members.
