It’s bright, easy, and comforting. This one lemon orzo is everything a weekn night dinner should be. Saute onion, garlic, and grated zucchini in extravirgin olive oil. Stir in dry orzo. Toast it for a minute. Then pour in hot vegetable broth. Stir occasionally and let the pasta get creamy. Stir in frozen peas, baby spinach, lemon zest, and a squeeze of juice. Let them wilt. Then turn the heat off and add grated parmesano and a touch of butter. This is creamy, lemony, and full of greens. And it’s made in one pan for minimal cleanup. Easy, right?
