Have your kids help you make this – it’s like a homemade Italian ice!

Hey, I’m going to show you how to make two different frozen watermelon treats. First, we’re going to take off the top and the bottom so we can stand this up. Then, if you can see here, we’re going to start where this white starts. So, you want to insert your knife and as we cut, you’re going to roll your wrist. Then, for our next cut, instead of starting where this green starts, we’re going to come back and start where the white starts again. Insert your knife and again, we’re rolling our wrist with the curvature of the watermelon. After you’ve peeled your watermelon, you might have a few white spots left. You can just shave these off. I always find a little bit longer knife can make this job way easier. You may even find it easier to use a long serrated bread knife. Now you have all clean watermelon. You can large dice this for a fruit salad or just cut it into bite-sized chunks. But for our project, we’re going to cut this into about inch thick slabs. Then I’m going to stack two of these slabs together and just cut these slabs about 2 in thick. I’ll remove the ends and cut this middle section right in half. Now I’m left with pieces like this. Then depending on your watermelon and the size of your popsicle sticks, I like to take a piece of this watermelon and I’ll poke a little hole right in the center of it like this. It makes it much easier to get a popsicle stick in here. Get all your watermelon chunks skewered. Lay them down on a half sheet tray or even a plate. We’re going to stick this in the freezer until these freeze solid. Then for this next one, I’m going to use about eight cups of diced watermelon into a blender. And I’m making a double batch of this because there’s two different ways to freeze this that I want to test out. About 1/4 cup of lime juice. And always remember when picking out limes. The smoother the skin, the juicier the lime. A light pinch of kosher salt. This is maybe a/4 of a teaspoon. Then we’re just going to buzz this up until it’s completely smooth. Then I’m going to pour some of our mixture in this flat pan. This can be anything, just as long as it fits into your freezer. And I’ll pour the rest into this bowl. I’ll show you why when it’s all done. Into the freezer we go. And now I have two different types of granita because this one I went in about every 15 20 minutes and gave it a whisk as it froze. And this one I froze solid so I could scrape it with a fork. And follow me because this is about to be the best popsicle you ever had.
