I’ve done this a handful of times. A couple things that work well for me: Get yourself a big onion and put half on each side of the meat. that gives you more space to shave without hitting spikes so you can get that authentic shawarma crispy bits. Get skin on pieces for about 1/4 of the meat so you can get some fat layered in there in the stack.
When I first tried this, seemed like content creators were scared of putting it out there because of the risk of eating undercooked meat if you don’t know what you’re doing. Glad more people are trying it.
