Chicky Sal Summer Part 2: Roasted Red Pepper Chicken Salad
Ingredients:
-4 cups shredded chicken
-1 red bell pepper, diced
-2 stalks celery, sliced
-1 cup cherry tomatoes, halved or quartered
-1 cup edamame, shelled and rinsed
-1/4 red onion, diced
-Handful of parsley, chopped
-Handful of dill, chopped
-Roasted red pepper mayo (to taste)
* I blended up the following:
* 1 cup Mayo
* A few tbsp garlic chili sauce
* 2 cloves garlic
* 1 roasted red pepper (i use the ones in a jar)
* Fresh chives, parsley, and dill (measure with heart)
* Salt and pepper, to taste

Welcome back to episode two of my chicky cell summer series. Today we’re making a roasted red pepper chicken salad packed with tons of chopped veggies. We’ve got red bell pepper, edetamame, red onion, celery, tomatoes, and some fresh herbs. And then we’re tying everything together with a super simple roasted red pepper mayo. To make this, I just blended up some mayo, garlic, chili sauce, roasted red pepper, chives, parsley, dill, salt, and pepper. I didn’t add any cheese here, but I feel like feta would be really good. This made for great meal prep and it was super tasty.
