I’ve got my harvest basket. Let’s go see what we can harvest for my Atlanta garden. I’m not the only one that’s already lost all three pairs of garden shears in the garden by this point in the season, right? Also, yes, I do sustain the squirrel population of our entire neighborhood. Pat on my back for actually being patient enough to harvest a pepper red. I normally just harvest them green. You can eat them either way, but they are sweeter when they’re red. At this point of the season, I’m questioning why I planted eggplant. Eggplants are super fun to grow. They produce prolifically. I just run out of ideas for what to make with them. By late July in Atlanta, it’s really clear which tomatoes are disease resistant and which are not. Blushing Star has been my favorite variety to grow. It’s highly disease resistant and the tomato itself is perfect. Thin skinned, lots of flesh, very little seeds. I love this tomato. Unfortunately, so do the critters. So, I’m trying to adopt a sharing as caring mindset. Also, all of this right here, this is arugula. Fun fact, it’s been 3 years since I actually planted arugula. All of my overflow tomatoes, those go into a sauce that’s super easy to make. Roast the tomatoes and blend it all up. Quick tip. If you harvest at this stage, which is called the blushing stage, and then let your tomatoes ripen indoors, you get more of the tomatoes that you actually planted without anything cracking or being stolen by a squirrel. I have to stop to admire the first sunflower of the season. And now, let’s go harvest my garden fail because no cut flower bed is complete without corn. This year, I learned the importance of supporting corn, especially if you’re growing it in a small space. If you’re a small space gardener like me, you’re going to need to support your corn or you’ll also have an epic fail. Did I still get some corn this year? Sure. But I was expecting just a little bit more corn from 12 Plants. Lastly, it’s time to play my favorite game, cucumber hideand go seek. It may be time to get my vision checked.   2. Do you plant watermelons and cantaloupe? It hits different when them squirrels take bites out your watermelons , they even pick all my tomatoes and leave them on the ground for me,which was very nice of them.

  4. You could cook babaganoush, italian eggplant fritters…but generally Mediterranean cuisine has plenty of recipes that will help you cook this veggie in style. Try recipes from Calabria, Greece,Turkey,Tunisia ,Lebanon…

  8. I love eggplant!! I usually just slice it and pan fry it in a little bit of olive oil and dip it in Italian sauce! …. I can't have dairy anymore, but I used to sprinkle it with Parmesan when I could 🤤

  10. You can broil the eggplants or roast it directly on fire, peel the skin and dip it in seasoned scrambled egg. You can also just chop the roasted eggplant and make an omelet 😁 we call it tortang talong in Filipino.

  12. Brinjal Curry (Eggplant curry), it was really good! I made it for the first time this year- too many eggplants also haha. Greek dishes: Moussaka, melitzanosalata (Like baba ghanoush). Roasted veg salad/ sandwiches/ soups
