First time doing beef cheeks. They are as good as they look.

  3. I love beef cheeks. I wish it was easier to get them. Whenever I go through Omaha, it’s mandatory that u stop at this little hole in the wall restaurant off of 4th for their tacos cachetas. I have to wash my face off in the bathroom before I leave but damn they’re good.

    Barbacoa here at home. Cachete (beef cheek) is often mixed with Lengua (beef tongue) and it’s amazing.

    Looks great! Did them recently. Can confirm. With the leftovers (warmed up via sous vide), fry up white corn tortillas with butter, put some sour cream on them, then the beef cheeks and chopped onions and cilantro. For a big flavor, add some habenero hot sauce. Thank me later.

    Smoked and braised? What was your time for cooking?

    I have some trimmed and vac packed in my freezer but just haven’t got around to cooking them up yet.

    I was able to cook some of these for tacos a few months back. I liked the taste but we both agreed they seemed very…greasy and gloppy, I guess is the best way I can describe. Is that common? Maybe I didn’t trim them well enough first?
