Today we’re making Greek ziki. It is one of my most favorite dips. It is so versatile, but also perfect on its own and perhaps it’s the dip of the Mediterranean. We start by grating an English cucumber, add it to a cheesecloth, and squeeze the excess moisture out. Then we mix it in with some yogurt, olive oil, red wine vinegar, salt, dill, mint, and garlic. Greek Tzatziki- the best Mediterranean dip there ever was 🤤🤤🤤
Ingredients:
2 cups @cabot whole milk yogurt or any thick or strained yogurt
1 English cucumber
2 garlic cloves, crushed
2 tbs EVOO
1 tsp salt
2 tsp red wine vinegar
1 tbs dill
A few mint leaves
Pita bread, for serving (optional)
Kalamata Olives, for garnish
Method:
1. Grate cucumber and using a cheese cloth squeeze the water out;
2. To a bowl add yogurt, cucumber, garlic, dill, mint, red wine vinegar, salt, and 1 tbs EVOO and mix well;
3. Top with olives, a drizzle of EVOO and enjoy!
