An easy bulgur salad recipe that’s perfect for any day. Made with bulgur, olive oil and herbs, this salad in ready in less than 30 minutes!
Ingredients:
▢1 1/2 cup fine bulgur
▢2 1/2 cup boiling water
▢2 tsp tomato paste
▢1 tsp sweet pepper paste, see notes
▢1 tbsp pomegranate molasses
▢1 cup green onions, chopped
▢1 cup parsley, chopped
▢1 cup fresh mint, chopped
▢1/3 cup olive oil
▢1/2 tsp salt
▢1/4 tsp black pepper
Instructions:
Place bulgur in a large bowl and pour the boiling water on it. Stir well. Cover with a lid or a plate and let it sit for about 15 minutes until cooked.
Once the bulgur is cooked and cooled, fluff it using a fork.
To the bulgur, add tomato paste, pepper paste, olive oil and pomegranate molasses. Stir well so all bulgur grains are combined.
Add in chopped green onion, parsley and mint to the bulgur. Mix well.
Season well with salt and pepper.
Cover and refrigerate for about 30 minutes before serving.
This Turkish bular salad, also known as kasir, is one of my absolute favorite salads to make. So easy and filling. Let’s start. Place the bular in a large bowl and pour the boiling water on it. Steer well and let it sit for about 15 minutes until it’s fully cooked. Then when it’s cooked, fluff it with fork and then add some tomato paste and pomegranate molasses and give it a good steer. Next, add some olive oil as well as salt and pepper. Mix well to make sure all is well combined. Now it’s time to add all the greens. I used some green onions, parsley, and fresh mint in this recipe. You can also use other ingredients such as red onion, white onion, dill or dill pickles, cucumbers, tomatoes, and even lettuce. Mix everything and let it sit in the fridge for about 30 minutes before serving. This is so delicious. Enjoy.
