Would appreciate some feedback on how this looks. i seasoned with thyme, parsley, and a tiny pinch of rosemary, with a glass pinot grigio, and parmigiano regiano to finish. Also sauteed some cremini mushrooms, spinach, and sausage to go with it. I didn't have access to arborio rice for budget reasons, so i used long grain rice from the supermarket and added a bit of roux while cooking to fake that extra gluten. It tastes delicious, but I've never actually had risotto so i have no idea if this is what it's supposed to taste like

    Il risotto è un piatto unico, non si accompagna ad altre pietanze nel piatto. Questo è un modo di fare asiatico.
    In questo caso avresti dovuto fare un risotto ai funghi, cucinando i funghi dentro il risotto.

    I didn’t understand what kind of rice you used. Arborio is one of the several types of rice which is good for risotto. Roux Is not in the recipe: it seems the risotto came out “too solid”.

    As somebody already told you, typically risotto is a main first course, not a side, and not needing a side. It would look more Italian if you would have cooked everything together.

    You didn’t mention what kind of broth did you use for cooking (usually risotto is cooked with broth to be added little by little)
