Ingredients:

2 cups honeydew melon, scooped into pearls
1/2 cup fresh blueberries
1 Persian cucumber, diced
1 small jalapeño, chopped
1/3 cup sweet red pepper, chopped
handful of fresh mint leaves, roughly torn

Citrus Maple Dressing:

1 tbsp olive oil
1 tsp Chillie flakes
1 tsp dried oregano
Salt and pepper to taste
juice of one lime
1 tsp @tajinusa seasoning
1 tbsp maple syrup

Whisk or shake well until the dressing is fully emulsified and smooth.

🌿To Assemble:

In a large mixing bowl, add honeydew melon pearls, blueberries, cucumbers, jalapeño peppers, chopped sweet, red peppers, and fresh mint leaves.

Drizzle the citrus maple dressing over the top. Gently toss to combine, making sure everything is likely coated in the dressing.

Taste and adjust – I had a bunch of salt or squeeze of lime if needed. Chill for 10 to 15 minutes before serving and enjoy.
