    In my opinion, every family has their own version of enchiladas and no one else can compare. And that’s totally fair, what makes food so much fun! Personally my abuela’s recipe is the best in the world. I’ll throw hands

    I love pastel Azteca. Just had it in La Posta in Mesilla. I’ve only ever had traditional enchiladas so this was really interesting. They also served it with a runny egg on top.

    My mother used to call them “lazy enchiladas”. I grew up with this version with sour cream and chopped green onions on top.

    This is the best way to make them, stuffing and rolling each enchilada is time consuming. Lazy ladas for the win.

    I am not sure exactly what you served up there, but I do stacked enchiladas all the time. Are we talking about the same thing? Easy to make, for me. No one over the course of my life has objected, either. Enjoy. C
