    I’m carnivore welcome to my meal every night looks good enough for me. You don’t have to knock every steak out of the park. Don’t listen to the complainers saying where is the sear… since I make this all the time went from eating at medium rare like this to more of a medium it’s an easier chew

    If you did like it, it was a good steak.

    I mean those guys on youtube usually overcook it, sear it to a crisp and call it a perfect medium rare. If they like it – good. But it sure isn’t the standard fo a “medium rare”

    It looks like it’s coming apart beautifully. I’m personally not too concerned with a crispier sear. If you end up with a situation where it isn’t dark enough on the outside but you’re already hitting temp, try a blowtorch as an emergency fix.

    If you’re going for prime rib or roast beef then maybe. Too low to render any fat for the cook and either not hot enough or not enough contact with the pan for the sear. Nearly no maillard browning. Might also be that the surface wasn’t dry on the sear, but really everything was too cold in the process.
