I'm a teacher on summer break right now, so I'm grateful to have time for slow mornings. Lately I've been making steel-cut oats every morning, even though they take 40 minutes and it would be easier to batch cook them, because I like the ritual. I feel that it fits with the lifestyle recommendations of MD to really take the time to embrace making a meal! Today I had them with peaches, cinnamon, and some Greek yogurt stirred in.

I use about a 5:1 ratio of water to oats because I like them soupy. I toast them with a tiny bit of olive oil in the pan before I add the water, and then they simmer for about 35 min.

  1. I’m a teacher on break here too! That looks yummy. I’ve been enjoying having the time to make these meals too and was just thinking about any ways to keep that going when we return to work. I also don’t usually get a lunch break but this year I’m going to insist on it! I teach students with extensive support needs so there always seemed to be a reason why I couldn’t walk away. This year will be different!
