Chicken with Roasted Potatoes and Veggies

    One of my first attempts without actually following any recipes or YouTubes online! Turned out okay-ish, the sauce was quite a fail though

    – Marinate boneless skinless chicke thigh in corn starch, soy sauce, dark soy sauce, cooking wine, water, and a lot of Cajun seasoning
    – Dice potatoes, carrots, zucchini all into roughly same shape
    – Boil potatoes and carrots for around 10 mins in water and salt
    – Remove and dry, mix potatoes/careots with zucchini and add olive oil, salt, pepper, and garlic powder
    – Put on 180 C 12 min air fry in batches
    – Pan fry chicken thighs for 12 mins in batches and let them rest before cutting in slices
    – Created a lazy sauce with leftover diced celery/onion/carrot – added minced garlic, tomato paste, red wine, and a bit of chicken stock. Added butter

    Are you using microwave to reheat it and if so how do the potatoes taste?
