Lentil ragu with eggplants, red bell pepper, mushroom and paprika, stewed slowly on low heat in tomato sauces with a spoonful of Gochujang (Korean fermented red chili paste) 🫣 added as twist and served on spaghetti with a sprinkle of nutritional yeast.

My Italian friend playfully told me this shouldn't be called Ragu as there isn't any meat and gochujang isn't Italian but she sweep the remaining sauce her plate with bread and had second helping so I think the taste is fine 😆
