150g starter, 325g water, 500g bread flour, 10g salt
mix & let sit for an hour on a warming mat. 4 sets of stretch & folds over 2 hours & BF for another hour and a half. cold proofed for 5 hours. baked lid on at 450° for 30 minutes & lid off for 15 minutes

  1. Under proofed. That’s not enough time for BF unless it’s 85 in your house.

    Looks great! My sourdough will proof in that amount of time in warm temperatures. Some people’s starter are just more active. I read some recipes where they are bulk proofing at room temperature for 12 hours and if I did that, my dough would be an over proofed puddle.
