0-400 method, flipped after 30 minutes pulled at 190 internal. So crispy and flavorful, good amount of smoke flavor too. Got the Searwood a couple months ago, love it so far.

The second time we did 0-400 we cranked up the heat to 450 for the last 10-15 minutes. They came out amazing.
