If you want something that tastes sweet and summery, make lemon blueberry syrup. In a large pot, I add six cups of blueberries, 1 and 1/2 cups of water, three cups of sugar, the zest from three lemons, and the juice from six lemons. These were large lemons, so if yours are small, use eight instead of six, but don’t forget to add the lemon zest. That’s where all the intense lemon flavor comes from. Bring these to a simmer on medium low heat until your blueberries are soft. And then grab your immersion blender. Because this is a syrup, I blend it until it is completely pulverized into a liquid. Next, I dip my mixture into a fine mesh strainer and sift it through using a wooden spoon. This is going to separate the majority of the seeds and skins from the juice. Next, I put it back on the stove, bring it to a simmer, and cook it for about 45 minutes to an hour or until it’s the thickness that you desire. Blueberries have a lot of natural pectin, so this will thicken up on its own without having to add anything to it. Pour the mixture into your jars, leaving a/4 in head space. And anytime you’re canning jams or jellies, make sure to clean the rims really well before adding the lid. These get water bath canned for 10 minutes. And after 24 hours, you can remove the rings and add your labels.

  1. I assume you already know this so its kinda for other people who might be curious, the leftover chunks you sift out makes amazing fruit leather if put in the oven or dehydrator. Ive also seen people dehydrate little drops of it and put them in yogurt to dehydrate again and it makes a delicious snack thats similar to yoggies.

  3. Next time, add a whole vanilla bean (scrape the caviar out into the blueberry mixture) and remove it before you use the immersion blender. I do that with my jam and then after I sieve the seeds/skins out I cut the vanilla bean into a few pieces and put one piece per jar. You can thank me later. Love your video, watch and labels!!
