▢ 1/2 cup JUST egg
▢ 1/2 cup vegan sugar
▢ 16 oz vegan cream cheese, softened
▢ 1 tsp vanilla extract
▢ 1 tub (10 oz) plant based whipped topping
▢ 12 oz fresh raspberries
Topping —
▢ Homemade or store bought raspberry powder
Instructions:
1. Place JUST egg & sugar in bowl, whisk together. Place over a small pot of simmering water on medium-low heat. Do not let bottom of bowl touch water. Whisk for 5 mins. Remove & let cool for 20 mins in fridge.
2. Place a separate bowl in freezer for 10 mins. Remove then whisk whipped topping, cream cheese, and vanilla extract in it. Cover & refrigerate for 10 mins.
3. Remove JUST egg & cream cheese mixtures, whisk together. Be very careful not to over-mix.
4. Assembly — soak your ladyfingers in raspberry sauce, set aside. In a 8”x8” pan, line with ladyfingers. Add half of cream filling and even out. The line raspberries. Add another even layer of ladyfingers and cream.
